Chorizo Pasta Recipe

SERVES 4

INGREDIENTS:

  • 3 TBSP OLIVE OIL
  • 4 CLOVES GARLIC, MINCED
  • 1 WHITE ONION, MINCED
  • ¼ CUP WHITE WINE
  • 1 CAN WHOLE PEELED OR DICED TOMATOES (400G)
  • ½ CUP HEAVY CREAM
  • BASIL, CHOPPED
  • CHORIZO DE BILBAO, SLICED
  • FRESH GROUND PEPPER
  • SEA SALT
  • PARMESAN CHEESE
  • ENOUGH PASTA FOR 4

METHOD:

  1. ADD OIL TO SAUTE PAN ON MEDIUM HIGH HEAT.
  2. SAUTE ONIONS & GARLIC UNTIL SOFT
  3. ADD CHORIZO AND LET RENDER FOR A COUPLE OF MINUTES
  4. DEGLAZE WITH WHITE WINE
  5. TURN DOWN THE HEAT AND ADD CANNED TOMATOES AND SIMMER FOR 4-5 MINUTES
  6. ADD CREAM AND SEASON WITH SEA SALT AND PEPPER
  7. FINISH WITH CHOPPED BASIL
  8. GARNISH WITH PARMESAN CHEESE

FOR PASTA:

  • IN A LARGE POT BRING SALTED WATER TO BOIL (SHOULD BE AS SALTED AS THE SEA)
  • ADD DRY PASTA AND COOK UNTI L AL DENTE. (APROX. 6-8 MINUTES DEPENDING ON THE TYPE)
